Byblos Deli Bellevue offers delicious, authentic foods and dishes from countries throughout the Mediterranean and Middle East. The deli features hand crafted sandwiches like Shawarma, Gyro and Falafel and Mezze such as Hummus, Baba Ghannouj and Tabbouli that are house-made daily the old-fashioned way. Our grocery has a wide variety of halal meats, cheeses, fresh vegetables and hard-to-find pantry items. Byblos Deli Bellevue also caters parties and events, both large and small.
Khalil Akl, Chef and Owner
Chef Khalil was born in Beirut, Lebanon and grew up immersed in the authentic flavors of the Levantine cuisine. He and his family would gather in the kitchen each day, creating divine dishes collectively referred to as Mezze. Khalil’s uncle, the owner of a five-star restaurant in Lebanon, witnessed his passion for food and offered him a position as his Sous Chef. The opportunity to create unique dishes alongside such a celebrated Chef-Owner was a turning point for Khalil's career path. Khalil would later travel to Paris, France in order to learn the fine art of creating delicious sweet and savory crêpes under the direction of a famous Crêpe Chef.
In 2008, Khalil moved to Seattle, Washington and began catering his ‘Plat du Jour’ Mediterranean meals for his friends and local businesses. In the Spring of 2010, Khalil began making crêpes at local Farmer’s Markets. His loyal customers kept asking him to open a café so that they could enjoy his creations any time of the day. He would like to personally thank you for your continued support.
For over 20 years, Khalil has shared these unique and flavor-filled Mediterranean dishes and French crêpes with his family, friends and loyal patrons. Simply Mediterranean uses the same family recipes that have been carefully guarded and passed down by his family.
You will be delighted to know that Simply Mediterranean holds true to its name and many family traditions. We use only fresh ingredients to keep the dishes simple and good for you. Our promise to you (and Khalil’s Mother) is that we make each meal with passion, but never with preservatives. Go ahead and look, but you won’t find even a hint of ‘artificial’ in our cuisine.
